Fiber Spice Muffins

A tasty way to get your fiber!

6 tbsp melted butter

3 large eggs

1/4 cup whipping cream 35%

1/2 cup Gingerbread DaVinci's Syrup

2 tsp ground cinnamon

1 tsp ground nutmeg

3/4 tsp baking powder

3/4 tsp baking soda

1 cup Flax Seed Meal (or mix Flax and Wheat Bran)

1/4 cup soy flour (or Atkins Bake Mix and omit bp/bs)

1/4 cup chopped walnuts -- optional

  1. Preheat oven to 375.
  2. Beat first 4 ingredients together.
  3. Mix the remaining ingredients and add to above.
  4. Put into greased muffin tin, and bake for about 20 minutes.

6 Muffins = 8 carbs per muffin, 6 carbs fiber.
