My girl wanted a serious cupcake. These are really good, very similar to carrot cake. Be sure to frost these goodies with cream cheese frosting ... recipe link below!
1/2 cup melted butter
4 eggs
1 tsp Pure Vanilla Extract (sugar free)
1 cup almond or pecan flour
1/3 cup unsweetend coconut
1 tsp baking powder
Dash of clove
Pinch of nutmeg
1/2 - 1 tbsp cinnamon (to taste)
4 packets Splenda
... or ...
1/4 cup + 1 tbsp DaVinci's Gingerbread syrup
- Preheat oven to 400 degrees.
- Mix butter, eggs, extract and DaVinci's syrup in one bowl.
- Mix dry ingredients together separately, then add to egg mixture.
- Divide batter into 12 mini or 6 regular muffin tins.
- Bake for 12 - 18 minutes until golden; they'll spring back when you press lightly on top.
