Mary's Spice Cake Muffins

My girl wanted a serious cupcake.  These are really good, very similar to carrot cake.  Be sure to frost these goodies with cream cheese frosting ... recipe link below!

1/2 cup melted butter

4 eggs

1 tsp Pure Vanilla Extract (sugar free)

1 cup almond or pecan flour

1/3 cup unsweetend coconut

1 tsp baking powder

Dash of clove

Pinch of nutmeg

1/2 - 1 tbsp cinnamon (to taste)

4 packets Splenda

... or ...

1/4 cup + 1 tbsp DaVinci's Gingerbread syrup

  1. Preheat oven to 400 degrees.
  2. Mix butter, eggs, extract and DaVinci's syrup in one bowl.
  3. Mix dry ingredients together separately, then add to egg mixture.
  4. Divide batter into 12 mini or 6 regular muffin tins.
  5. Bake for 12 - 18 minutes until golden; they'll spring back when you press lightly on top.
