A very delicious and spicy soup. Not to mention a snap to prepare!
4 cans chicken stock or 8 cups homemade
1/4 cup curry paste / powder or to taste
4 cups diced chicken
1 can chopped, stewed tomatoes
Dash of red pepper flakes or Tabasco sauce to taste
1/4 cup sugar free peanut butter
- Combine hot broth and peanut butter; use hand blender if desired to fully integrate.
- Add curry, chicken, tomatoes, pepper and simmer for 1/2 - 1 hour until flavors meld.
Before serving, check to see if the soup is spicy enough for your taste ... If not, add a bit more pepper.
